Honey Strawberry Preserves

Today we made Strawberry Preserves sweetened with honey.
Cutting the berries

Adding the pectin
Sealing the lids

We were able to do it all while Nolan and Ruby were taking naps.
It is a little too sweet for my taste, so I'm going to try making the next batch from just berries without any added sweetness. I have some great little helpers.

Your girls are so sweet. I am sure the strawberry jam will be great with peanut butter or cream cheese for sandwiches. I think I am going to try to make some preserves with Sienna after seeing your post! We might end making mulberry preserves because they are easier to get around here. I am always afraid about sealing the jars, What tool is Emily using?

They are tongs that are specially designed for picking up the jars. I have no idea what they are called. Maybe they are called canning tongs. There are directions on how to seal the lids on the bottom of a case of jars. I was so scared she was going to get burned with the huge pot of boiling water, but she did great.

This is funny. I was clicking through my links, checking on everyone and I thought I had clicked on Christy, but it was you. When the page came up, I said "what are Emily and Lily doing in NC". LOL!

I love the preserves project! I imagine, if your berries are sweet enough, you won't need any added sweeteners next time.

She didn't get a single drop on the dress. I got two drops on my shirt.

Recipe please--- All of my canning recipes have sugar for the sweeter. I would love to do some with honey. Jennifer

Today I'm making some with no sweetener at all and I'll post the recipe if it's any good
